Nestled in the wines and traditions of Catalonia, the Priorat region hosts a unique culinary experience. Inside the luxurious Gran Hotel Mas d’en Bruno, an innovative fine dining restaurant dares to go beyond the usual ingredients—no tomatoes, potatoes, peppers, or chilis. This bold choice transforms the kitchen challenge into a celebration of historical authenticity.
Celebrating its second anniversary, the hotel exemplifies excellence and tradition. Recognized by Relais & Châteaux from the start, it takes a meticulous, handcrafted approach, honoring Catalan heritage and medieval culinary roots.
The limited menu is a deliberate homage to the past. Chef Josep Queralt and his team at Vinum restaurant explore the Llibre del Sent Sovi, the earliest Catalan recipe book from 1324. This document predates the Age of Discovery by two centuries, showcasing pre-Columbian ingredients that shaped Spanish cuisine today.

In Catalonia, Chef Queralt continues to explore Spain’s rich gastronomic history. While others, like Paco Morales in Córdoba, delve into Andalusian roots, Queralt’s focus on historical Catalan flavors gains special significance in 2025. This year, Catalonia is proud to be named a World Region of Gastronomy, the first European region to earn this honor.
His dishes reflect a backward-looking approach, offering a taste of the past. Imagine conger eel with a smoked fish bone and almond sauce, or partridge cooked with fresh herbs and mustard seeds. These are dishes that tell stories—gastronomic time travel.
Vinum, the restaurant at Gran Hotel Mas d’en Bruno, still offers a modern menu, with options for omnivores and vegetarians. At Bruno’s Bar, enjoy tapas like Iberian ham, Cantabric anchovies, and tomato toast with D.O.P. Siurana olive oil. The lunchtime menu at Tarraco features local bites—sea bass tiradito, ganxet bean hummus, and candy pork belly—designed for contemporary tastes.
Throughout, sommeliers expertly pair wines from Priorat, a rising star in Spain’s wine regions. The hotel collaborates with over 106 wineries, offering their robust reds in restaurants, a wide selection in the boutique, and organizing tours to visit small producers and wine cooperatives.

The Lobby
Guests can take excursion tours to explore the stunning surroundings. Highlights include the ruined Carthusian monastery of Santa Maria d’Escaladei, which offers an impressive VR tour, and charming hilltop villages with breathtaking views for miles.
Many visitors nickname Priorat the «Tuscany of Catalonia.» This comparison perfectly captures the region’s picturesque landscapes and medieval charm.
The hotel, Mas d’en Bruno, is part of the Stein Group, a privately owned company that develops, restores, and manages boutique hotels across southern Europe. This explains the significant investment in renovating the historic buildings, which used to be a monastery and later a private residence.
The renovation blends Catalan heritage with modern comforts. It was carried out by Astet Studio, a renowned Barcelona design firm famous for creating some of the sexiest dining rooms in Marbella. Their work on Mas d’en Bruno earned them a Hospitality Design Award for Restoration, Transformations + Conversions.
The Suite
The design blend respects the historic stone masonry while adding modern touches like natural stone and pale oak. A burgundy color palette highlights the region’s wine country ambiance, and arches pay homage to the original façade.
The original building offers room variation—grand arched windows, wooden-beamed ceilings, and double-sided fireplaces stand out in the best suites.
A new wing features ten garden suites, ideal for groups. These are mostly identical, except the one at the end, which has a private pool.
Both areas showcase curved furnishings, like cocoon-like headboards and curved coffee tables. General manager Jordi Compte Stevens suggests these design choices mirror the sinuous landscape of Priorat.
The team behind Mas d’en Bruno chose to craft a strong sense of place, going beyond the usual luxury hotel expectations, creating a truly unique experience.
