Chef Hayat: 34 Years of Culinary Soul
Since 1990, Chef Hayat Rmouti has been the heart of Villa Maroc’s kitchen. Her dinners rotate nightly through the Andalusian-style courtyard, and her market tours—with playful vendor banter and baskets of fresh argan oil, saffron, and seafood—are legendary.

Les Jardins: A Desert Oasis
Just 10 minutes outside Essaouira, nestled among ancient argan trees, lies Les Jardins de Villa Maroc. Opened in 2022, it features 12 freestanding domed suites, a shaded pool, and a serene yoga shala that hosts international wellness retreats.
“It’s a corner of heaven tucked away in the desert,” says Mounia. “You don’t necessarily feel like you’re in Morocco—which is a good thing.”
