Experience Copenhagen’s cutting-edge jazz scene at Epicurus — a bold fusion of fine dining and underground jazz that draws inspiration from Tokyo’s vibrant clubs. Unlike the iconic venues of New York or New Orleans, Epicurus offers a fresh, modern twist with meticulous aesthetic detail and improvisational music.
Niels Lan Doky, a respected jazz pianist and partner in the project, emphasizes this unique blend. With performances on world-renowned stages like Carnegie Hall and collaborations with legends such as Pat Metheny and Michael Brecker, Doky’s expertise shines through. He has deep roots in Copenhagen’s jazz history, particularly during the 1950s and ’60s when American jazz giants like Louis Armstrong, Stan Getz, and Dexter Gordon visited Denmark, elevating the city to a global jazz hub.
Doky has been honored by Queen Margrethe II of Denmark for his musical achievements and serves as the musical director of Epicurus, which opened its doors in April. He often graces the stage himself, playing on a state-of-the-art Bösendorfer 230 Vienna Concert piano, personally selected from Austria. Yet, at Epicurus, the focus isn’t solely on the performers — it’s an immersive experience designed for music lovers and connoisseurs alike.

Niels Lan Doky at the Piano
As musical director, Doky compares his role to that of a concert hall or opera director. He curates seasons focused on great composers like Bach, Verdi, or Wagner. The performers are world-class, but it’s the repertoire that makes Epicurus special.
The residencies last a few weeks, enough for word of mouth to spread. Last month, Camille Sledge paid a heartfelt tribute to Aretha Franklin. The audience, mostly reserved Danes, ended the night dancing in the aisles.
As Doky explains, “All my career has been about bridging deep artistic substance with broad accessibility — making jazz enjoyable for everyone.”
The Experience
At Epicurus, even the drinks are carefully chosen. Your ticket covers your seat for the concert and includes a flight of drinks—sparkling wine, followed by your choice of wines, cocktails, or non-alcoholic drinks.
The bar is curated by Rasmus Shepherd-Longberg, one of Denmark’s top cocktail experts and owner of Ruby, a bar repeatedly ranked among the World’s 50 Best. Partnering with him is Michael Hajiyianni, former head bartender at the famous Alchemist restaurant.
A Piece of History
At the entrance, an original Miles Davis painting — the only one displayed in Denmark — welcomes all guests. Davis gave this artwork to Bill Evans during his comeback in 1981. Evans loaned it to Doky, symbolizing friendship and faith in Epicurus.

Scallops with Kale, Watermelon Radishes, and Caviar
At Epicurus, the focus is on creating a balanced, harmony-driven dining experience. While some elite restaurants turn meals into spectacles with 30 courses and long hours, Epicurus keeps it simple and enjoyable.
The menu, crafted by head chef Oliver Bergholt, is compact with six courses. It can be finished in under two hours. Guests also have the option of à la carte dining if they prefer a lighter experience.
There’s no theatrical flair, but the quality and pleasure are there — much like jazz music, which thrives on collaboration and improvisation around seasonal ingredients.
Menu highlights change regularly, but current dishes include:
- Smoked salmon trout wrapped in shiso leaves
- Lightly seared scallops with kale, watermelon radishes, and caviar
- Grilled venison with parsnips and green asparagus
- Summer salad with whitefish roe and “grandma dressing”
Servers educate guests on this last item, explaining it’s a classic comfort food familiar to many in Copenhagen. Made from lemon, sugar, vinegar, cream, and dill, it’s humble yet high quality — a reminder of Scandinavian roots amidst global influences.
Experience the perfect blend of simplicity and sophistication. Reserve your table now — enjoy a well-balanced, delicious, and harmonious evening out.
